We recently baked these Christmas cupcakes for a yummy festive treat. Emilia got ridiculously excited when I whipped out the ingredients and her little apron! This time we opted for gingerbread cupcakes with cream cheese frosting. I have baked gingerbread cookies before...I've even once baked a gingerbread house from scratch! But never a gingerbread cupcake. I knew either way I'd be won over by the cream cheese frosting (whack cream cheese frosting on pretty much anything and it tastes like heaven!) but I was surprised by how savoury these tasted. Without the frosting they could pass as a breakfast muffin! If you love Christmas flavours & spices then you will adore these. That gingerbread cookie spatula is the cutest! My Lili Sophia is 11 months old, and I simply cannot wait till she is old enough to bake with me and enjoy it...just as I did with my older girls who are now 20 and 15. :)
