Prawn and Herb Linguine


On Friday I made prawn linguine for my family.  It actually turned out delicious (despite the fact that I almost burnt all the pasta for lack of a big enough pot!) and most people even had seconds!  It's very healthy and suitable for dairy-free pescatarians like me! ;)  The recipe is taken (slightly modified to cater for more people) from Marie Claire Real & Simple cookbook.  


Ingredients:
600g Linguine pasta
King Prawns (however many you like, I used 3 small packs)
375g organic cherry tomatoes (chopped in half)
5 cloves of garlic
2 handfuls flat leaf (Italian) parsley
18 leaves fresh basil
2 tablespoons chopped chives
150ml olive oil
1 lemon

Cook the linguine in salted boiling water.  
Heat the oil in a pan and add the garlic.  Next add the prawns and simmer for a few minutes.  Add the cherry tomatoes and cook for about one minute.  Put the pasta in a big bowl and add the prawns to it.  Stir in the herbs, and squeeze in the juice of one lemon.  Make sure everything is mixed evenly and serve!

(Serves 6 people)


Super easy, quick and healthy!  It's my perfect meal to cook :)  The day after we went to my mom's house and ate Spaghetti Aglio Olio e Peperoncino (spaghetti with garlic, olive oil and chili pepper)...hahaha!  If I could I would eat pasta everyday.  Seriously.  I love it that much!

    p.s. yes I had to send something b/c as an English Writing major at university you are the first person I know to get published so it is a HUGEEEEEEEEEE deal!!! And since I cannot celebrate the publishing as I'm in Philly I had to send a little celebratory thing your way b/c it's so exciting :) Although the sentiments in the card may be a little loopy as I was still working 7-day weeks and quite sleep deprived when I wrote it but basically it's what I'm saying here!
